INVESTIGACIÓN QUÍMICO ANALÍTICA EN VITIVINICULTURA Y AGROALIMENTACION 

 

En la actualidad la actividad del Grupo comprende las siguientes áreas:

 

  • Estudio de la tendencia a la inestabilidad oxidativa y control de los procesos de elaboración y conservación
  • Aislamiento, purificación y caracterización de compuestos en productos vitivinícolas y agroalimentarios, así como su viabilidad en otros usos (dietéticos, alimentarios, cosméticos, etc.).
  • Estudio de componentes presentes en productos vitivinícolas y agroalimentarios beneficiosos para la salud.
  • Análisis de polifenoles, aromas y otros parámetros en uvas, mostos, vinos, vinagres, brandy, licores y productos agroalimentarios.
  • Caracterización y diferenciación de productos vitivinícolas y agroalimentarios y su relación con la calidad.
